Special Vinegars and Vinegar Reductions
The Sol de Munda special vinegars and vinegar reduction are supreme category and truly different in taste. They are made from selected wines to produce an excellent quality and great taste.
Sol de Munda offers very select wines, made by traditional methods that bring out un matched tastes and aromas. They are perfect for tasting with our pates and meats, we also offer special wines for cooking.
Our pates follow old, artisan recipes calling for the best ingredients and aromatic herbs. For better taste and contrast, we recommend using our Balsamic Vinegar Reduction or Pedro Ximenez wine reduction.
Serrano Cured Ham
There are several breeds of pork that fall down inside the group of white hoof hams
Retinto race is a mix breed of duroc pork with iberic, they are nurtured and fed exclusively from cereal fodder. These hams possess subtle aromas and flavours thanks to the lipid infiltration.
Duroc breed is very common around the world. This variety is characterized for the rusticness and for producing meats with good levels of lipid infiltration on lean cuts. This is ideal to provide a great taste, texture and color to the cured ham.

We have several types of cured hams from the Iberic race, with it´s characteristic black hoof, ¨pata negra¨.
There are differences of texture, aroma and flavour amongst the hams, the determining factors are:
Location of the curing process, weather it is in Guijuelo, Salamanca, subject to the strict controls of the regulatory council for the DO, denomination of origin, or cured under the same standards in our cellar.
The types of food that nurture the animals, acorns from cork oaks trees or grasses and fodder being the most important.
There are differences in the hams and in the prices but ALL are very exquisite.
Cold Cuts and Sausages
All our recipes for our cold meat have been passed on for several generations. They are all hand made in an artisan way, in order to keep the recipes as original as possible bringing forward unique tastes.
These products are sold as complete pieces or half pieces vacuumed packed.
The iberic meats are recognized and well appraised by great chefs and connoisseurs. All our meat cuts are vacuumed pack and frozen.
